albondigas

one of my favorite soups. this one wasn't my best work, but still good.

also, the young miguel that i mention in the post that this links to is currently battling a brain tumor. he is staying strong and doing well, but please send some love and good wishes into the world for him and his family.

soup season

i started it off right with some quick-n-easy posole. nothing like the real thing (and for me, the "real thing" is my friend nancy's - simply the best!) but still great. the key for me is tons of lime and warmed corn tortillas for dipping.

this cooking light recipe is very similar to what i made, though i cooked my own cuminy chicken, didn't add celery and used TJ's salsa verde instead of tomatillos.

DA BOMB! i made this for friends recently and we were all in love - so good!

can't stop

i kinda had a peach-n-pepperjack quesadilla three nights in a row. super super good.

8/9/10

unwrapped

i was planning on making summer rolls with the mountain of rice paper wrappers i have leftover from a party, but when it turned out to just be a dinner for one i decided that was too much work. instead, all the insides in a bowl - rice noodles, mango, baked tofu, cilantro, lime juice and some lime ponzu. messy but good.

8/6/10

leftover lunch

seseame tofu, baby bok choy, brown rice and cucumber mixed with tamari, naval orange juice, chili and ginger. so good.

8/2/10

summer breakfast

fruit salad with a bunch of stone fruits (including my current obession - red raven red plums - wowzers!), agave, orange juice and mint with plain yogurt topped with almonds, sunflowers seeds and flax seeds. best ever.

7/29/10

leftover lunch

in my effort to cook the book, i made pasta with caramelized onions and blue cheese. super good. and great the next day. and i'll tell ya - these recipes are so simple that i actually have most of the ingredients most of the time. i had the pasta and the onion hanging around and happened to have some leftover blue cheese...DONE.

7/24/10

summer pizza

i had some leftover ingredients from making a strawberry arugula pizza (that you need to make RIGHT NOW OMG SO GOOD). i threw them together with a zucchini and this is what happened. pretty good. just saute some sliced zucchini while toasting a thin pizza crust in the oven. take it out, top with goat cheese, zucchini and shaved parm. back in the oven for a minute and done.

7/14/10

night and day

dinner: roasted potatoes, wax beans, capers and pan-fried tofu
lunch: leftovers with arugula, almonds and lemon/olive oil

staycation

4th of july weekend included family, friends, funnel cake, ice cream from the windmill, splashing around in the lake, 75% off flea markets, celebrity sightings, sun and fun. pretty perfect.

still moosewood-ing

after i made the amazing sesame tofu with spinach, i had tofu and greens leftover. i decided to use them to make the orange-glazed tofu from the moosewood cooking for health book. they were both so, so good. i had gingery brown rice and wilted spicy greens with each type of tofu...so awesome.

4/6/10

cook the book

i've had the moosewood simple suppers cookbook for about 5 years and have never once made anything from it even though every (really, EVERY recipe...except for the fish chapter) sounds SO GOOD. so decided to cook the book...each time i actually take the time to officially make something, it is from this book. i've actually made a lot so far. everything is super..simple. for real. really easy, really great and with stuff that i generally have anyway. pictured above is the roasted ratatouille which was dynamite.

4/3/10

chicago dog

for my chicago dog, we went to superdawg. i was so excited as it is featured in my second favorite tv show of all time, a hot dog program (favorite show of all time is sandwiches you will like, duh). it was fun and had great packaging.

3/10/10

my migas

migas is my go-to weekend breakfast. my version is actually not that migas-y, but whatevs. scrambled eggs mixed with green salsa, blue corn chips, tapatio and greek yogurt. love it.

every morning

i have this nearly every winter morning. oatmeal with tons of toppings. it is really easy to make and tastes so good. i make it the night before and warm it up in the microwave at work - seriously, so easy.

the night before (at least 8 hours), combine the following and put it in the fridge:

.5 c rolled oats
1 c milk or water ( i do .5 c milk, .5 c water)
tiny dash of vanilla

the next morning, i microwave it for about 1-2 minutes (watch it because it can overflow) and add the topping:

1 tsp brown sugar
1 tsp ground flax seed
1 tsp whole flax seed
a sprinkle of wheat germ
about 1 walnut
tiny dash of kosher salt
a shake of cinnamon

check this out for other oatmeal ideas.

2/11/10

leftover lunch

brown rice with roasted sweet potatoes, ponzu-marinated tofu, red curry paste, coconut milk and cilantro. so good!

cold weather favorite

it doesn't look great, but it tastes amazing! grits with egg and pancetta. so so so super easy to make and good for a wintry breakfast or dinner. i usually put some garlicy greens on there, too, but it really doesn't need it.
