still moosewood-ing

after i made the amazing sesame tofu with spinach, i had tofu and greens leftover. i decided to use them to make the orange-glazed tofu from the moosewood cooking for health book. they were both so, so good. i had gingery brown rice and wilted spicy greens with each type of tofu...so awesome.

shoot for the stars

a part of my collection of plants at work, this funny cactus has grown from a mini little inch to this crazy tall guy in a few months. where does he think he is going?

cook the book

i've had the moosewood simple suppers cookbook for about 5 years and have never once made anything from it even though every (really, EVERY recipe...except for the fish chapter) sounds SO GOOD. so decided to cook the book...each time i actually take the time to officially make something, it is from this book. i've actually made a lot so far. everything is super..simple. for real. really easy, really great and with stuff that i generally have anyway. pictured above is the roasted ratatouille which was dynamite.

every morning

i have this nearly every winter morning. oatmeal with tons of toppings. it is really easy to make and tastes so good. i make it the night before and warm it up in the microwave at work - seriously, so easy.

the night before (at least 8 hours), combine the following and put it in the fridge:

.5 c rolled oats
1 c milk or water ( i do .5 c milk, .5 c water)
tiny dash of vanilla

the next morning, i microwave it for about 1-2 minutes (watch it because it can overflow) and add the topping:

1 tsp brown sugar
1 tsp ground flax seed
1 tsp whole flax seed
a sprinkle of wheat germ
about 1 walnut
tiny dash of kosher salt
a shake of cinnamon

check this out for other oatmeal ideas.

valentine making party

for the past four years, my friend and i have thrown a valentine making party. just a fun night to get together with friends and make valentine's for our loved ones. valentine's day was special in our house growing up - with handmade cards and fancy dinners (and desserts), so i have an appreciation for the holiday and celebration. these three are what i made this year - really not my best work!

2/11/10

leftover lunch

brown rice with roasted sweet potatoes, ponzu-marinated tofu, red curry paste, coconut milk and cilantro. so good!
